Easy Coconut Curry Chicken: flavor bursting curry with your favorite vegetables and chicken will be a meal you won’t forget.
I love international foods and curry is one of my favorites. This coconut curry chicken can be made in just thirty minutes. For a meal that is so delicious you will wonder why you ever ate out.
My favorite part of curry is the mix of chicken and vegetables so I always add my favorites into the recipe. So this curry has carrots, red peppers, onions and potatoes. The added veggies helps increase the curry and we were able to feed more than just 4 people. It also increased the cook time because who likes eating raw potatoes.
Ingredients
- 3-4 large boneless skinless chicken breasts, pounded to even thickness
- 3 medium potatoes, diced
- 1 c cut carrots
- 1 small yellow onion, chopped
- 1 red bell pepper, chopped
- 4 T yellow curry powder
- 1 T Thai red curry paste
- 2 (15 oz) cans coconut milk
- 2 t sugar
- 2 t salt
- cilantro for garnish
Instructions
- Chop chicken and veggies into 1 inch pieces.
- Drizzle a large pan or skillet with oil over medium heat.
- Add chicken, onions, peppers, potatoes and carrots to pan. Saute 1-2 minutes.
- Sprinkle yellow curry powder over chicken and veggies.
- Continue to saute 5-7 minutes until chicken is cooked through.
- Add red curry paste, coconut milk and sugar to the pan.
- Stir over medium heat until sauce begins to bubble.
- Taste, add salt, taste again. (Add more salt if needed.)
- Serve with cooked rice and garnish with cilantro.
