Fresh Arugula Apple Salad: arugula, dried cranberries, pecans, Granny Smith apples and blue cheese covered in a zesty orange vinaigrette.
We eat salads every day at my house. So when I find a good recipe I can’t wait to add it to our mix. This fresh arugula apple salad is the latest. Not only does it have the greatest flavor but it has the freshest taste. The mix of dried cranberries, pecans, apples and blue cheese give the best flavor.
Ingredients
- 8 oz. baby arugula (I like a spring mix for color)
- 1 large Granny Smith apple, peeled and sliced
- 1/2 c toasted walnut or pecan halves
- 1/2 c dried cranberries
- 6 oz blue cheese, crumbled
- Dressing:
- 3 T apple-cider vinegar
- 1 t grated orange zest
- 2 T freshly squeezed orange juice
- 2 1/2 t Dijon mustard
- 2 T pure maple syrup
- 1 1/2 t Kosher salt
- 1/2 t freshly ground pepper
- 2/3 c olive oil.
Instructions
- In a large bowl, toss together the arugula, apple, nuts, cranberries and blue cheese.
- For the dressing, whisk together the vinegar, orange zest, orange juice, mustard, maple syrup, salt and pepper in a bowl. Slowly whisk in the olive oil.
- Toss it all together and serve immediately.
Need to make it a little more hearty? Add bacon. Seriously this will be a salad that everyone eats. Plus the dressing is one that you will always want to have on hand. It is the perfect sweet with a zesty orange flavor. Everyone will be eating it!
