Healthy Blueberry Oat Muffins: sweet muffins made with wheat flour, oats and fresh blueberries.
I am always looking for healthy snacks for my kids. I hate always having the go to snack basket with fruit snacks and granola bars. So making something that they will not only eat, but love is always a treat.
These blueberry oat muffins take minutes to mix up, bake and devour. We have them for snacks, breakfast and sometimes even dessert. They are filled with healthy fibers and putting fresh blueberries in the mix make them an even better treat.
Ingredients
- 1/2 c wheat flour
- 1/2 c flour
- 1 1/2 c oatmeal (quick oats)
- 1/2 c sugar
- 1/4 t salt
- 1 T baking powder
- 1 c milk
- 1 egg
- 1 T canola oil
- 2 t vanilla
- 1 c blueberries (fresh or frozen)
- 2 T coarse sugar (optional)
Instructions
- Preheat oven to 400 degrees Fahrenheit.
- Spray the muffin tins with cooking spray.
- Combine all dry ingredients into a large bowl.
- In a separate bowl whisk together the milk, egg, oil and vanilla.
- Add the wet ingredients to the dry ingredients.
- Stir until just combined.
- Gently fold in the blueberries.
- Divide the batter evenly between 12 muffin cups.
- Sprinkle the tops of the muffins with coarse sugar.
- Bake for approximately 20 minutes until muffins are lightly browned and a toothpick comes out clean.

This is a great recipe for you to do with the kids. The measurements are basic and the ingredients simple. I seriously couldn’t take the pictures fast enough! They were eating my blueberries as fast as I was putting them out plus I kept catching little fingers in my shots.
Another bonus for this recipe is that you can even freeze a bag of them for up to two months. Sometimes we can’t eat a dozen fast enough, so I’ll freeze half a dozen and just pull them out the night before for a fresh new breakfast.
