Meat, Chicken or Shrimp Stir Fry: A simple, healthy meal that will bring crisp veggies into your menu.
I try to have my fridge full of healthy foods but sometimes we can’t eat them fast enough. That’s where this simple stir fry comes in! I take out whatever meat I have in the freezer, toss the veggies into my wok and we are ready to go! My kids love the colors and flavor too.
Ingredients
- 3 T oil
- green onions
- (1 of the following) Beef, pork, chicken strips or shrimp
- Sliced carrots
- Cauliflower
- broccoli
- green beans
- sliced mushrooms
- red peppers
- pea pods
- bean sprouts
- water chestnuts
- Sauce:
- 1/2 c chicken broth
- 4 T soy sauce
- 3 T apple cider vinegar
- 2 T brown sugar
- 1 1/2 T cornstarch mixed with 1 T water
Instructions
- Pour 3 T oil in the bottom of a wok. Add a bunch of green onions, sliced to include part of green. Add one or more of the meat of choice.
- Saute until cooked through.
- Steam any of the following veggies (sliced carrots, cauliflower, broccoli, or green beans).
- Add to the cooked meat.
- Add any of the following (sliced mushrooms, red pepper strips, pea pods, bean sprouts or water chestnuts).
- Stir all of the sauce ingredients together and add to mixture.
- Cook until bubbles, so that the sauce thickens. Serve over hot rice.
- No specific amounts are given for meats or veggies. Just put together what you like the most and enjoy!
I love that it is a quick, go to meal that puts healthy food on my table. It doesn’t matter what kind of veggies I have, they are all eaten. I especially love that it is an easy back up meal when I run out of time to make the masterful meal I’ve planned. My family loves to eat it on rice and I always have fortune cookies on hand for dessert.
