Oatmeal Chocolate Chip Coconut Cookies: A classic cookie with a sweet coconut twist.
Growing up I had one cookie recipe that I made all of the time! Oatmeal chocolate chip cookies. They were delicious in every way, especially the dough. It was a treat that everyone in my family loved and I was always willing to make them.
Little did anyone know that I had a hidden agenda behind making them though. My mom was amazing and had a little breakfast schedule each weekday. Cold cereal, eggs, oatmeal, pancakes, etc. I ate most breakfasts but I strongly disliked eating oatmeal. So anytime I could make a batch of oatmeal chocolate chip cookies I’d take it. The cookies took up 3 cups of my moms morning meal and the more cookies I made the less oatmeal I would have to eat.
Ingredients
- 2 c shortening
- 1 1/2 c brown sugar
- 1 1/2 c sugar
- 4 eggs
- 2 t vanilla
- 2 t soda
- 2 T hot water
- 3 c flour
- 2 t salt
- 4 c quick oats
- 1 (12oz) bag chocolate chips
- 1 (7oz) bag of sweetened coconut
Instructions
- Cream shortening and then add sugar, mix well.
- Add eggs and vanilla.
- Dissolve soda in hot water and add to creamed mixture alternating adding dry ingredients.
- Add chocolate chips, oats and coconut. Mix well.
- Bake at 375 degrees for 10-12 minutes.
- Makes 8 dozen.
I still don’t think that my mom is aware of my scheming but it worked and I at less oatmeal and more cookies. Well I recently tried a cookie at Swig, coconut pecan that got me thinking about switching up this classic recipe with a little twist. So one day I added a 7 ounce bag of sweetened coconut and our lives were changed!
There is something about the flavor and textures that make your mouth burst. This is a recipe that you will make over and over again!
