Roasted Lemon Garlic Parmesan Asparagus: A simple side dish that will keep you making it over and over again.
I love finding easy side dishes. I grew up with the mindset that a meal isn’t complete unless it contains food from every food group. Vegetables are the hardest to vary in the dinner planning arena. But this simple roasted lemon garlic parmesan asparagus will be something you make over and over again.
Ingredients
- 1 pound asparagus
- 2 Tablespoons olive oil
- 2 Garlic Cloves, minced
- 3 Tablespoons Parmesan
- Juice of one lemon
- salt and pepper to taste
Instructions
- Preheat oven to 400 degrees. On a baking sheet, arrange the asparagus in a single layer. Toss in the olive oil and sprinkle with salt and pepper.
- Roast for 8-10 minutes or until the asparagus is crisp on the outside and tender in the center. Toss in the garlic, parmesan and lemon juice. Add more if desired. Serve immediately.

I love how simple it is to create. Start by cutting the ends off of the asparagus. Then toss a little olive oil, salt and pepper and roast. Once you take it out, top with parmesan and lemon.
Seriously this is the easiest recipe and the flavor divine. Everyone will eat their fair share of veggies when this is on the menu.
