The Perfect Winter Salad: Pear, Pomegranate, Spinach Salad
Something about winter doesn’t always say salad, but this is the perfect winter salad! It is the perfect blend of pear, pomegranate and spinach garnished with feta cheese and walnuts. This is a salad that will make everyone long for spring.
Ingredients
- 2/3 c chopped walnuts or pecans, toasted
- 3/4 c pomegranate arils
- 3 oz feta cheese crumbled
- 1/2 c dried cranberries
- 2 Barlett pears (firm but ripe) cored and sliced
- 9 oz baby spinach
- Dressing
- 1/4 c apple cider vinegar
- 3 T extra-virgin olive oil
- 1 1/2 T honey
- 1 t dijon mustard
- salt and pepper to taste
Instructions
- Whisk all dressing ingredients in a bowl to bend well.
- Place all salad ingredients in a large salad bowl, drizzle with desired amount of dressing then toss to evenly coat.
- Serve immediately.

I always love a salad that is quick to toss together. The hardest part of this salad was deseeding the pomegranate, but Costco sells just the seeds making this salad a synch. Just throw all of the ingredients into a bowl and you will surely make an impression.
The dressing is really vinegary so if you are picky, use a poppy seed dressing. It would be the hit of the meal.
