Quick and Easy Chicken Avocado Burritos: The most delicious chicken, avocado, cilantro, cheese quesadilla/burrito.
Quick and easy are favorite dinner descriptions at my house! Sometimes if it isn’t quick and easy, it doesn’t get made. These chicken avocado burritos are just that! Not only are they delicious, but they are healthy too!
Ingredients
- 2 c cooked and shredded chicken
- 1 c Mexican cheese blend
- 1 avocado, diced
- 2 T cilantro, chopped
- 4 large tortillas
- 1 T oil
Instructions
- Mix the shredded chicken, cheese, cilantro and diced avocados.
- Lay a tortilla flat and add 1/4 of the mixture.
- Roll the tortilla and repeat with the rest of the tortillas.
- Pour 1 T oil into a heated pan or griddle.
- Place all four tortillas on the pan and cook for 2 minutes on medium-high heat.
- Flip and cook for another 2 minutes until golden brown.
- Serve warm

I love using shredded rotisserie chicken because that makes it extra simple. All you do is combine the ingredients, load up the tortilla and grill. So when you’re looking for a last minute healthy dinner or lunch idea- this is it!
