We love mixing up healthy meals at our house. This quinoa spinach power salad is a new favorite! I love that is loaded with healthy power foods. It is not only colorful but extremely nutritious and delicious. My kids love it and that is something that is hard to find.
What is a super food?
There’s no official scientific definition of a superfood, but it’s generally accepted that superfoods contain high levels of much-needed vitamins and minerals. They can also be a source of antioxidants, substances that shield our bodies from cell damage and help prevent disease.
Finding foods that are quick and nutritious are treasures and this power salad is the jackpot. Quinoa and spinach are amazing super foods. With all of its rich nutrients this salad could literally be a complete meal itself.
Ingredients
- 1/2 cup uncooked quinoa
- 2 cups spinach, finely chopped
- 1 tomato, diced
- 1/2 cup diced cucumbers
- 1/4 cup raisins
- 1 and 1/2 tablespoon lemon juice
- 1 and 1/2 tablespoon extra-virgin olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions
- In a medium bowl, rinse the quinoa a few times.
- In a medium saucepan, boil 2 cups of salted water. Add the quinoa and continue to boil for about 10 minutes until the quinoa is tender.
- Drain the quinoa and let it cool.
- In a large bowl, combine the spinach, tomatoes, cucumbers, raisins and cooled quinoa.
- In a small bowl, make your lemon vinaigrette. Combine the lemon juice, olive oil, salt and pepper. Pour onto the salad and toss to coat.
- Season to taste with more salt and pepper, if needed.

The best part about this salad is that you can add anything to it. Use the recipe as a base and add anything you want to it. Some great additions are: avocado, kale, apples, jicama, and craisons. It doesn’t matter what you add, it works!
Doesn’t matter how big you make it. Just remember to add more lemon juice and olive oil to your vinaigrette. We love making a big batch and using it for healthy meal prep. This power salad is great and will boost any meal.
