Slow Cooker Chicken Taco Chili: a quick recipe for a dump and cook meal, spicy but full of flavor.
I do not like chili. I don’t. I like taco soup, but can not handle the flavors and textures of chili. This slow cooker chicken taco chili may have changed my attitude towards chili. It is simple to make and seriously so delicious! Sometimes I worry a crockpot soup will spoil before we can eat it all but this chili didn’t last long.
I love the convenience of opening cans and dumping the ingredients to melt their flavors together. It literally took me 10 minutes to get it ready. The only reason it took 10 minutes was the fact that I love using rotisserie chicken in my crockpot meals. It adds to the simplicity and I feel like it saves me time in the long run. So I shredded my chicken and then placed it in the crockpot. The meal could have been eaten just hours after that because the chicken was already cooked.
Ingredients
- 1 onion, chopped
- 1 (16oz) can black beans
- 1 (16oz) can kidney beans
- 1 (8oz) can tomato sauce
- 10 oz package frozen corn kernels
- 2 (14.5 oz) cans diced tomatoes with chilis
- 1 package taco seasoning
- 1 T cumin
- 1 T chili powder
- 24 oz. chicken breasts (2-3)
- Garnish, sour cream, shredded cheese, cilantro
Instructions
- Combine beans, onion, corn, tomato sauce, tomatoes with chilis, cumin, chili powder and taco seasoning in slow cooker.
- Place chicken on top and cover.
- Cook on low for 10 hours or on high for 6 hours.
- Half hour before serving, remove chicken and shred.
- Return chicken to slow cooker and stir in.
- Top with fresh cilantro, shredded cheese and sour cream.
This is one of those meals that you can pop in the crockpot in the morning and have a family feast in the evening. Everyone will love it! We love garnishing it with sour cream, cheese and cilantro. I always eat it with tortilla chips either crushed or dipped like salsa. I do warn you for those with littles, use less chili powder if they are sensitive to hot, it was a little too hot for my 17 month old.
I am a fan of anything my husband will box up for lunches. It makes me feel like my work in the kitchen isn’t going to waste and understand that my efforts are truely appreciated. Also it’s easy to add a little water to and help it last a little longer.
