Baked Parmesan Sweet Potatoes: crisp flavorful sweet potatoes make the perfect side for any meal.
I hope I’m not the only person who tries to create healthier meals for my family. Sometimes I’m successful and other times, I fall back on the familiar. This is a new recipe that has made a healthy addition to our family’s dinner menus.
These baked parmesan sweet potatoes are a cinch to make. First you peel and cube the sweet potatoes, toss them in the marinade and into the oven they go. I love my potatoes a little crispy so after I baked them for the set time, I broiled them for a few extra minutes.
Ingredients
- 2 sweet potatoes (peeled and cubed)
- 2 t minced garlic
- 1 T olive oil
- 2 T butter, melted
- 4 T grated parmesan cheese
- 1/2 t garlic salt
- 1/2 t Italian seasoning
- dried parsley
Instructions
- Preheat oven to 400 degrees.
- Peel and cube sweet potatoes into 1/2 -1 inch cubes.
- Place garlic, oil, butter, salt, parmesan cheese and Italian seasoning in a ziplock bag and mix well.
- Throw in the sweet potatoes and shake until well coated.
- Place aluminum foil on cookie sheet and lightly spray.
- Place coated sweet potatoes onto cookie sheet and spread out evenly.
- Bake for 20-25 minutes.
- Serve warm and sprinkle with dried parsley if desired.
