Fruit Parfait Pie: a healthy and delicious breakfast, brunch or dessert. Fruit topped yogurt over a granola crust is the perfect treat for any occasion.

Making healthy choice meals is a must. I especially love when I can find something that my family can eat for any meal. This fruit parfait pie can be breakfast, lunch, dinner or dessert.
Ingredients
- Crust:
- 2 c old fashioned rolled oats
- 1 c oat flour (homemade or store bought)
- 2/3 c honey
- 3 T coconut oil
- 1/2 t ground cinnamon
- 1 t pure vanilla extract
- 1/8 t salt
- Filling:
- 1 1/4 c Vanilla Greek yogurt
- 2 T honey
- Topping:
- fruit of choice
Instructions
- Preheat oven to 350 degrees.
- Grease a pie tin and set aside.
- In a large bowl, combine oats, oat flour, cinnamon, vanilla, and salt together. Add honey and coconut oil and mix until dough is combined and sticks together.
- Spread the granola into pie pins and press down firmly with a spatula or the bottom of a greased glass cup.
- Bake in preheated oven for 10 minutes. Remove from oven and allow to cool completely. Place in fridge or freezer to cool quicker.
- Combine yogurt with honey.
- Spread the yogurt evenly over cooled granola crust.
- Decorate with your favorite fresh fruit. Enjoy immediately or place in the fridge to cool and set.
