Mandarin Salad

Easy to add more fruits and veggies.

The thing I love about this recipe is that it is a great base and anything can be added to it. With its simple sweet vinegar dressing, you can really add any fruit or vegetable to the salad. Want more color? Add blueberries! Need to make it a meal? Just add some grilled chicken! The possibilities are endless and your guests will love it!

Mandarin Salad

The perfect summer salad.
Prep Time 10 minutes
Course Salad
Servings 12 people

Ingredients
  

Salad

  • 2 quarts Romain Lettuce chopped
  • 2 quarts Spring Mix
  • 2-3 ribs Celery cut
  • 1 8 oz Can of Mandarin Oranges drained
  • 2-3 Green Onions cut
  • 1 cup Grapes Green or red or both
  • 1/2 cup Candied Almonds Place 1/4 cup sugar in skillet until crystalizes then add the almonds.

Dressing

  • 2 TBS Sesame Seeds toasted @350 for 10 min
  • 3 TBS Sugar
  • 1 tsp Salt
  • Pepper
  • 1/4 cup Vegetable Oil
  • 2 TBS Vinegar

Instructions
 

  • Toss salad ingredients together.
  • Mix dressing in blender or shaker bottle.
  • Add dressing just before serving.
  • Enjoy!

Notes

This is a family favorite.

This has been a family favorite for as long as I can remember! My mom will add bananas and apples in the summer time to make it a little sweeter. It has been made for so many memorable occasions that it is practically part of the family. Isn’t it funny how food has a way of becoming so familiar that it reminds you of home? This is one of those dishes for me!
