Mint Chocolate Chip Cookies: a chewy chocolate base filled with mint chips gives these cookies a taste that will never be forgotten.
My absolute favorite tastes are mint and chocolate! So when I found this recipe I knew it would be an instant favorite. Most cookies have a vanilla base with chocolate chips to fill them. Yet this cookie has a chocolate base with mint chips. It creates a flavor burst then minute you place it in your mouth.
Ingredients
- 2 1/4 c flour
- 1/3 c cocoa
- 1 t baking soda
- 1/2 t salt
- 1 c butter, softened
- 3/4 c sugar
- 3/4 c brown sugar
- 1 t vanilla
- 2 eggs
- 1 (12 oz) package of green mint chocolate chips
Instructions
- Stir together flour, cocoa, baking soda and salt.
- In a mixer, beat butter, sugars and vanilla until creamy.
- Add eggs and beat well.
- Gradually add flour mixture and continue beating.
- Stir in chips.
- If desired, chill dough in the refrigerator to make it easier to work with.
- Scoop onto ungreased cookie sheet.
- Bake at 350 degrees for 8-10 minutes.

The recipe calls for green mint chips, but I used the Andes Mint chips because they are in season. The green chips really stand out on the chocolate base cookie, but taste so delicious!
I love how simple this recipe is to make and even more, the many complements I receive when I make them. They are an instant crowd pleaser!
