These delicious oatmeal, peanut butter, coconut, chocolate chip energy bites are the perfect healthy snack. We are always looking for simple, healthy treats for our kids to eat. I especially try to give them something with protein so having peanut butter is a bonus.
Ingredients
- 1 c dry oatmeal
- 2/3 c toasted coconut flakes
- 1/2 c peanut butter
- 1/2 c ground flax seeds
- 1/2 c semisweet chocolate chips
- 1/3 c honey or agave nectar
- 1 T chia seeds
- 1 t vanilla
Instructions
- Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour.
- Once chilled, roll into balls. (I use my 1.5 inch cookie scoop)
- Store in an airtight container and keep refrigerated for up to 1 week.
Why are snacks so important?
Even though snacking has developed a “bad image,” snacks can be an important part of your diet. They can provide energy in the middle of the day or when you exercise. A healthy snack between meals can also decrease your appetite and keep you from overeating at meal time.
I always loved making no bake cookies as a child but a pound of butter isn’t healthy. So you can imagine my excitement when I found this recipe! I can mix them up and have snacks for a week. Best part is the entire family will eat them!
I place them in small plastic containers or bags so they are easy to carry. It also helps us eat the right size portion. My husband likes to plan ahead and bring his own snacks to work.
