Peach Cobbler

Welcome summer! How can you celebrate summertime without some sort of cobbler? I love cobbler in dutch ovens but how often do you pull that heavy pot out to cook over your fire?

This cobbler recipe is so simple and can be used over any type of fruit. I chose peaches because we are starting our harvest and have more than we can eat.

Peach Cobbler

Ingredients

  • 8 large peaches
  • 1 cup flour
  • 1 cup sugar
  • 1/2 t salt
  • 1/4 cup shortening
  • 1 egg
  • 1 t baking powder

Instructions

  1. Grease 8" square baking pan.
  2. Peel and slice peaches into pan.
  3. Combine remaining ingredients into dough and crumble dough on top of peaches.
  4. Bake at 350 degrees for 30 min.
  5. Serve warm with vanilla ice cream.

Caramelized Squash and Zucchini

My favorite garden vegetable is squash! It’s texture is so unique but has the perfect taste combo. How many people have more squash then they know what to do with?

This caramelized squash is so simple but tastes amazing. Not only will your family love it, they will request it!

Caramelized Squash

Ingredients

  • 1 onion
  • 2 squash
  • 1 zucchini
  • 5 mushrooms
  • 3 T butter

Instructions

  1. Melt butter in saucepan.
  2. Add sliced onion and begin to caramelize.
  3. Combine sliced squash and cook until soft. (about 15-20 min)

Need to get rid of more veggies? Toss them in the mix! I love the colors of squash and zucchini together.

Garden Harvest

I love the memory of picking raspberries, strawberries and snap peas from my grandmother’s gardens. I know that most of the harvest didn’t make the dinner table because we snacked in the garden, but loved every minute of it. We would come inside from playing, with scratches all over our bodies from digging for raspberries. I think watching the grandkids enjoy the harvest was even more exciting then the actual harvest.

Is it just me, or do summer dinners consist of garden harvests? I remember growing up loathing the tomato plate that always found its place on our dinner table. My brothers hated baby food soup made from garden squash. Summer meals were always filled with squash, peaches, tomatoes, kale, or other popular crops.

Well, I have created a meal this week that can be made from your garden’s harvest, or if your harvest is sparse you can use canned fruits/vegetables. This maybe one of my favorite meals.
