The most basic but delicious dessert for any occasion. Keep it simple and add cherry or blueberry pie filling on top. Looking for something fancy? Add fresh fruit and a dollop of whipped cream.

Ingredients
Crust
- 3 packages Graham Crackers crushed
- 1 1/2 cup Melted butter
- 1 cup Powdered Sugar
Filling
- 4 8oz Packages of Cream Cheese softened
- 2 cup Sugar
- 8 Eggs
Topping
- Fresh Fruit or 3 cans of cherry or blueberry pie filling
Instructions
Crust
- Crush Graham Crackers and combine with powdered sugar and melted butter.
- Press into the bottom of a greased cookie sheet.
Filling
- Blend all filling ingredients in blender.
- Pour over pressed crust.
- Bake at 350 degrees for 30-35 minutes.
Topping
- Wait for the cheesecake to cool completely and add fresh fruit or pie filling.
- Keep refridgerated.
- Serve with ice cream or whipped cream.
- Enjoy!

Nothing reminds me more of my Grandma Bevan than this dessert. As a child I would scrape off all of the blueberries onto the side of my plate and funny thing, I still scrape them off before I take a bite. I love all the flavor burst in such simple dessert. This was a regular treat at grandmas, probably because it is so easy to make. Making it for my family brings back so many great memories.
It is the perfect blend of cheesecake/graham crackers with the sweetness of the berry filling. In fact if blueberries aren’t your thing you could totally add any pie filling. I think I’d still scrape off the filling no matter what it is out of habit. But the taste will blow you away. I love being able to make a dessert in ten minutes and have in in the oven. Chill and add topping and you are set!
