I love making dinner for my family but sometimes the side dishes are a little challenging. This almond green bean saute is one that I continue to go back to. Crisp green beans garnished with sautéed mushrooms, celery and almonds will give your taste palate a sophisticated taste.

- 1 pound fresh green beans trimmed (about 4 cups)
- 2 tablespoons olive oil
- 1 medium stalk celery sliced
- 1/4 cup slivered almonds
- 10 whole fresh mushrooms sliced
- salt and pepper to taste

- In a medium saucepan cook beans in boiling water until crisp-tender (about 6-7 minutes).
- Drain and run cold water over to stop the cooking process.
- Saute celery, almonds and mushrooms in the same pan until mushrooms are tender (about 10 minutes).
- Add beans, salt and pepper; toss lightly. Heat thoroughly.

Not only does it taste delicious but it can be ready in just 20 minutes. It is quick and easy. I love working on this side dish while the rest of my meal is cooking. It makes for a delicious treat and everyone will enjoy it.
I like my mushrooms sliced but you can cook them whole too. I sautéed the mushrooms, celery and almonds while the green beans cooked. Then I tossed everything together and served it nice and fresh.
