I love a good side dish! These apricot glazed carrots are one that will be remembered. Tender carrots glazed with sweet apricot preserves will sweeten any meal.

These sweet glazed carrots will be loved by all. I love how easy they are to make. I used whole carrots but this dish could easily be made using baby carrots. It is done in a flash and will be eaten just as quickly.

Ingredients
- 4 cups carrots sliced or baby
- 3 tablespoons butter
- 1/3 cup apricot preserves
- 1/4 teaspoon salt
- pinch nutmeg
- 1/4 teaspoon freshly grated lemon peel
- 2 teaspoons lemon juice

Instructions
- In a medium-size saucepan cook carrots until crisp and tender (about 8 minutes).
- Drain and set aside.
- Melt butter in a skillet, stir in preserves.
- Add all other ingredients, except carrots, and cook briefly.
- Toss in carrots and cook just long enough to heat thoroughly.
