Ingredients

cups
carrots
sliced or baby
3
tablespoons
butter
1/3
cup
apricot preserves
1/4
teaspoon
salt
pinch
nutmeg
1/4
teaspoon
freshly grated lemon peel
2
teaspoons
lemon juice
Instructions
In a medium-size saucepan cook carrots until crisp and tender (about 8 minutes).
Drain and set aside.
Melt butter in a skillet, stir in preserves.
Add all other ingredients, except carrots, and cook briefly.
Toss in carrots and cook just long enough to heat thoroughly.
