I love adding color to my dinner table and this balsamic-roasted potatoes with asparagus makes a beautiful side dish. Fresh potatoes and asparagus seasoned with balsamic vinegar, garlic infused olive oil and salt and pepper. It is a dish that looks almost too good to eat.
My favorite part about this recipe is that I get two dishes in one. A side for the meal and a veggie. My kids love the flavor combination and I love how simple it is to make. If you’re not a balsamic fan, leave it out! This is seriously my favorite way to to cook just about any vegetable.

- 1 pound new potatoes or small red potatoes cut into quarters
- 1 bunch asparagus tips cut into 2 inch pieces or halved
- 2 tablespoons garlic-infused olive oil
- 4 tablespoons balsamic vinegar
- salt and pepper
Ingredients

- Preheat oven to 390 degrees.
- In a large roasting pan, add the olive oil, balsamic vinegar and salt. Add the potatoes and toss to coat fully before roasting for 20 minutes.
- After 20 minutes, add the asparagus with a little extra olive oil, if needed. Toss to coat and cook for an additional 15 minutes.
- Season with extra balsamic vinegar, salt and pepper.
- Serve and enjoy!
