I love a simple soup recipe. I feel like fall and winter months are most famous for the soups that they bring to our tables. Well this broccoli cheese soup is one of our very favorites!
Filled with fresh vegetables and a delicious cheesy broth, it is sure to be a favorite at your house. I never know how my children will react to new recipes but this one was a major win! We literally scraped the pan clean and everyone ate more than their share.

- 1/2 cup margarine
- 3 tablespoons flour
- 2 cups milk
- 1 pound Velveeta cheese cubed
- 1 teaspoon dry mustard
- 1/4 teaspoon pepper
- 3 teaspoons chicken bouillon granules
Ingredients
Sauce

- Boil all veggies but broccoli in 2 cups of water for 10 minutes.
- Add the broccoli and boil for 10 more minutes. DO NOT DRAIN.
- In a saucepan, melt margarine. Stir in flour. Add milk and cook, stirring constantly, until thick. Add cheese and other ingredients. Mix until smooth. Add to undrained veggies and heat together but do not boil.

I love how quickly it comes together. I chopped up the veggies, boiled them, made the sauce and had dinner on the table in thirty minutes. Did I mention that my family still asks about it? It is a total favorite at our house.
