In a large skillet, melt butter over medium-high heat. When melted and bubbly, add steak. Stir constantly while it is cooking.
When the meat is about halfway cooked, add onions and green peppers. Season with salt, pepper and hot sauce. Continue stirring until meat is cooked through and the onion and peppers are tender.
Spoon the meat filling into sliced rolls and add a slice of provolone cheese. If desired, place the open-faced sandwiches onto a baking sheet and place under the broiler in your oven. Broil for 1-2 minutes or until bread is toasted and cheese is melted.
