I love Mexican food! These chicken tostadas are a simple way to bring a little twist to the Mexican food at your dinner table. They are a major hit at my house!
I grew up with a Taco Bell within walking distance from my house. Quite often I would buy my meals using nothing but change. I am sure the workers dreaded my arrival. But who doesn’t like hard shell tacos?
Then fast forward a decade and I was called to serve a Spanish speaking mission in Tempe, Arizona. I didn’t know what Mexican food really was until I spent a year and a half in their homes. I thought I liked it before but have you ever eaten real Mexican food? Wow! So good.

Ingredients
Shredded Chicken

- Place chicken and diced tomatoes in slow cooker. Cook on high for 4 hours or on low for 6-8 hours.
- Shred the chicken.
- Layer the tostadas with desired ingredients.
- Enjoy!
So I love adding a little spice to our weekly meals. Tacos are easy and everyone loves them but tostadas are just as simple and my kids go crazy over them! Rather than rolling or folding them up in a shell or tortilla, you spread them on and eat like a pizza.
