A simple variation for cake bites.

Cake bites have become quite the craze. Who doesn’t like sweet cake balls covered in chocolate? Well I made these chocolate covered cookie dough bites the other day and loved the results!

I love cookie dough! It is my favorite part of making cookies minus eating a warm cookie fresh from the oven. This is the perfect option for those cookie dough cravings with half the time.

The best part of this recipe is that it is super quick to mix up. I had the dough mixed in 5 minutes. It was super easy to form the balls using my cookie scoop. I placed them on a parchment lined cookie sheet and then placed them in the refrigerator. While they cooled, I warmed up my melting chocolate.

Instructions
  1. Line an cookie sheet with parchment paper or aluminum foil and set aside.
  2. In a large mixing bowl, mix together butter and brown sugar until it is fluffy (about 3 minutes). Add vanilla and beat until combined.
  3. Turn the mixer to low and alternate the flour and sweetened condensed milk until combined. Gently fold in chocolate chips.
  4. Scoop the cookie dough into balls using a cookie scoop. Place on parchment paper and refrigerate until firm.
  5. Melt your chocolate melting wafers. I like to do it for 30 seconds and then stir. Repeating until there are no lumps.
  6. Then I place my ball on a fork over the bowl and use a spatula to drip chocolate over the ball. Tap it a couple of times on the edge of the bowl to get off the excess chocolate and return ball to parchment paper. If you are using sprinkles or any toppings decorate your ball now. Continue with the rest of the batch.

      The easiest way for me to cover them in chocolate is to use a fork for the base and then use a spatula to spoon the chocolate over the ball.  I tap the fork a couple of times against the bowl and then return the ball to the parchment paper.

      These are great to decorate for any occasion. Just change the sprinkles or chocolate. I first made this recipe like a bar. It is so rich though that turned them into cake pops or truffles and dipped them in chocolate. For me the smaller bites may be even more enjoyable than eating an entire bar. Either way, your mouth will thank you!

      Delicious with or without chocolate.

      The best part is that this recipe is eggless.  Being pregnant cookie dough is not an option though, until I found this chocolate chip cookie dough bar recipe. Talk about the perfect blend of flavors. It literally tastes identical to real cookie dough but is salmonella free. So when I was pregnant and craving cookie dough, this was always in my freezer. It is basic enough that you can eat them with or without chocolate. They are delicious either way.

      I may even be tempted to use it in a milkshake or mix in with some ice cream. But the possibilities are endless and with a recipe so simple and delicious, you’ll be coming back for more!
