I love me a chocolate cookie! Seriously, love! This chocolate Rolo cookie is my all time favorite recipe. It is quick and easy and a recipe that everyone will love!
A family affair.

I think what I love most about this recipe is that the entire family can help make them! I have the kids start unwrapping the Rolos while I mix up the dough. Then someone hides the Rolo in the dough. Finally the last helper rolls the dough ball in sugar. It takes a team and in our case, it takes a family to make these cookies.

- 2 1/2 cups flour
- 3/4 cup unsweetened cocoa
- 1 teaspoon baking soda
- 1 cup sugar
- 1 cup brown sugar
- 1 cup butter
- 2 eggs
- 2 teaspoons vanilla
- 48 Rolos
- 2 tablespoons sugar

- Combine flour, cocoa and soda and set aside.
- Beat sugars and butter until well blended; add eggs and vanilla. Add dry mixture and blend well.
- Shape cookies into small balls. Press Rolo into center of ball and cover with dough. Roll cookie ball in sugar.
- Bake on un-greased cookie sheets at 350 degrees for 8-10 minutes, until tops of cookies are slightly cracked. Cool on racks.
