A childhood Christmas memory.
Growing up I loved Christmas! Everything about it was exciting and new. I loved counting on so many traditions and time spent with family. These chocolate waffle cookies are something I still dream about.
Every year we would gather with my dad’s cousins for a family party. It was the type of party that everyone remembered. Not because it was amazing but because of the weird traditions they did. How many of you have a family band? At this party anyone, no matter the age, who ever played an instrument, participated in the band. It was worse than any junior hight band concert but has made for a million memories.
We sang Christmas songs, acted out the nativity and then filled our bellies with Christmas cookies. My favorite from this collection were always the chocolate waffle cookies. My aunt would make them and always decorate with green frosting and sprinkles. They looked like a tic-tac-toe board and I could never eat just one. Maybe it was the shape or style but something about these nontraditional cookies caught my eye.
A uniquely memorable Christmas cookie.
We have long stopped that tradition since our family has grown in numbers. This year I decided to create a recipe and a cookie similar to that great childhood memory. I don’t think they will ever taste as good as they did as a child but at least my kids will get the experience of this unique Christmas cookie.
- Preheat the waffle iron.
- In a medium bowl, whisk together the sugar and butter. Whisk in eggs and vanilla. Then mix in the flour and cocoa. Whisk until smooth.
- Drop dough using a large cookie scoop. I can fit two scoops per waffle square. Close the lid and cook for 2 minutes. It may take more or less time depending on the waffle iron.
- Place cookies on a wire cooling rack.
- Meanwhile prepare the frosting. Once the cookies are cooled you can frost the cookies or dip them in chocolate. We love sprinkles too!
I am sure you could use a devil’s food cake mix but wasn’t willing to try at least the first attempt. I remember them tasting more like a brownie than a cake but worried they wouldn’t cook right in the waffle iron. I was in a hurry so I just used canned icing but you could totally make your own. My sprinkles were plain red and green so I didn’t color my frosting but you could totally make it festive.
