In a medium bowl, whisk together the sugar and butter. Whisk in eggs and vanilla. Then mix in the flour and cocoa. Whisk until smooth.
Drop dough using a large cookie scoop. I can fit two scoops per waffle square. Close the lid and cook for 2 minutes. It may take more or less time depending on the waffle iron.
Place cookies on a wire cooling rack.
Meanwhile prepare the frosting. Once the cookies are cooled you can frost the cookies or dip them in chocolate. We love sprinkles too!
