Need a dessert in a flash? Try these delicious Congo squares. A sweet chocolate chip cookie bar made in a single cookie sheet. They are the best to prep because it takes 10 minutes to mix up and then you toss them in the oven. You get a rich cookie without the hassle of batches.
This is a recipe from my grandma. I don’t remember her making it but I do remember her handwriting on the recipe card that I copied. This was one of the recipes I made sure to have when I went away to college. It is a recipe I make again and again.

- 2/3 cup oil
- 2 1/4 cup brown sugar
- 3 eggs
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 1/2 cups flour
- 12 ounces chocolate chips (You can use less if you'd like)
Ingredients

- Warm oil, add brown sugar and mix. Cool.
- Add eggs beating after each one.
- Then add the baking powder, salt and flour. Next add the chocolate chips.
- Pour batter into a prepared cookie sheet. Use a spatula covered in cooking spray to spread the batter to cover the whole sheet.
- Bake at 350 degrees for 25-30 minutes.
This is not one of those recipes that works in a 9×13 pan. I tried it once thinking it would be fine and they don’t bake evenly because they are meant to be thin. So for this recipe keep to your cookie sheet.
