Nothing says fall like the smell of sweet cranberries. This simple cranberry chicken is something I make just to send it’s sweet smells throughout my house. It is simple to make and will make any meal a treat.
If you are are daring, this marinade is delicious on pork chops or even turkey breasts. It creates a sweet and savory flavor of caramelized cranberry. It will be a meal that is remembered.

- 1 tablespoon butter
- 1 onion chopped
- 3 pounds chicken (4 breasts)
- 2/3 cup bottled chili sauce
- 3 tablespoons brown sugar
- 1 tablespoon red wine vinegar
- 1 teaspoon dry mustard
- 1 14 ounce can whole cranberry sauce

- In a 400 degree oven, melt butter in a 9x13 glass baking dish.
- Add onions to dish and bake uncovered, stirring occasionally, for 10-15 minutes or until onions are soft.
- Place the chicken in dish and reduce the oven temperature to 350 degrees. Bake for 25 minutes.
- Stir together chili sauce, brown sugar, vinegar, dry mustard and cranberries. Spoon over the pork chops and continue baking for 30 minutes or until meat is fully cooked and cranberry sauce has slightly caramelized.

Try it with pork or turkey breast too.
It is quite easy to make. First you cook the onions. Then you bake the chicken and finally top with the cranberry marinade to caramelize. At my home it is an aroma that lifts spirits and always brings smiles to faces. If you like cranberry, try my favorite crockpot cranberry meatballs.
