Sometimes I think we look beyond the mark. Yes, a multistep, 40 ingredient recipe does sometimes taste better but sometimes you just need quick and easy! Well these cream cheese filled cupcakes are just that! There are literally 4 ingredients (depending on the cake mix).
First you whip up a chocolate cake mix. Following the instructions on the box. I like to use my 1 1/2 inch cookie scoop to fill each muffin tin to half full. Then you place a frozen one inch cream cheese cube in the center of the tin. Finally you top it with more batter. Toss them in the oven and bake. You can get fancy on the frosting but I always have a tub of frosting on hand especially when I’m going for quick and easy.

- 1 chocolate cake mix (plus ingredients listed on box.)
- 12 ounces Cream Cheese cut into 1 inch cubes and frozen.

- Preheat oven to 350 degrees. Place paper liners in muffin tin or heavily grease each tin.
- Follow the directions on the cake mix. Make batter.
- Fill each tin half way with batter. Place one cream cheese cube in the center of the tin and then cover it with more batter.
- Bake at 350 for 25 minutes. I was able to get 16 cupcakes.
- Let them cool completely before you frost.
- Frost and enjoy!
