I love hot chocolate! This is the season when you can’t get enough. These cookies taste just like a nice cool cup of cocoa. Hot cocoa cookies are rich and chewy topped with marshmallows and covered in chocolate.
My children love the idea of hot chocolate but ever since they burned their tongues I can’t get them to drink it. I feel like we all can use a good warm hot chocolate once in a while and who doesn’t like cookies.
- Prepare the icing by combining all ingredients in a medium bowl and mixing together with a whisk. Spoon a small amount of icing onto the top of each marshmallow, and use the back of the spoon and spread it a bit. You can top with sprinkles if you'd like.
- Allow icing to set up for at least 30 minutes before serving.
They are really quite simple to make and leave your house smelling soooo good! First you make the chocolate cookie. Then you top with a marshmallow and bake for a little longer. Once they are cooled you top them with the most delicious chocolate frosting.
