  1. In microwave, melt butter and baking chocolate, stir frequently until all clumps are gone. Once melted, set aside to cool slightly.
  2. In a medium bowl, whisk together the flour, cocoa, baking powder and salt.
  3. In a bowl with an electric mixer, beat the sugar, eggs and vanilla on low speed until well combined. Add the cooled chocolate mixture and blend until just combined.
  4. While mixing, add the flour mixture slowly and blend until just combined. Scrape down the sides of the bowl, then cover the dough and refrigerate for about 1 hour.
  5. Preheat oven to 325 degrees and line 2 cookie sheets with parchment paper. Use a tablespoon size cookie scoop to scoop the dough, then roll the dough in your hands to make a ball. Arrange the balls 2 inches apart on your baking sheet and flatten slightly. Bake cookies for about 12 minutes.
  6. While the cookies bake, cut the large marshmallows in half crosswise. When the cookies have baked, remove from the oven and press one marshmallow, cut side down, into the center of each cookie. Return the cookies to the oven and bake for another 2-3 minutes. Allow the pan of cookies to cool a few minutes, then transfer cookies to a cooling rack.
Icing
  1. Prepare the icing by combining all ingredients in a medium bowl and mixing together with a whisk. Spoon a small amount of icing onto the top of each marshmallow, and use the back of the spoon and spread it a bit. You can top with sprinkles if you’d like.
  2. Allow icing to set up for at least 30 minutes before serving.
