Delicious sweet honey chicken with roasted potatoes and green beans.
Dinner in a flash.
Everyday it seems like dinner is such a chore. Sometimes making a grand meal is not an option at my house. So I turn to these one pan dinner meals. Our favorite is the sweet honey chicken and vegetables.
It literally takes 10 minutes to prepare! Then you bake different portions of the meal at different times but all on the same pan. The clean up is simple! A cutting board, a bowl for the marinade and a few utensils. Everyone will race to do dishes for this meal.

- 2 Tablespoons olive oil
- 2 tablespoons unsalted butter melted
- 2 tablespoons honey
- 2 tablespoons brown sugar
- 1 tablespoon Dijon mustard
- 1 1/2 teaspoons minced garlic
- 1/2 teaspoon dried oregano
- 1/2 teaspoon basil
- salt and pepper to taste
- 4 large boneless skinless chicken breasts
- 16 ounces red potatoes cut into 1 inch pieces (about 4 potatoes)
- 1 tablespoon olive oil
- salt and pepper to taste
- 12 ounces frozen green beans

- Preheat oven to 400 degrees. Lightly grease a rimmed baking sheet with nonstick cooking spray. I used parchment paper for easy clean up.
- In a small bowl, whisk together the glaze ingredients; season with salt and pepper, to taste. Set aside.
- Place potatoes in a single layer onto half of the prepared baking sheet. Drizzle 1 tablespoon olive oil and season with salt and pepper. Roast the potatoes for 10 minutes in your preheated oven.
- Remove the potatoes and add the chicken to the other half of the pan. Spoon half of the glaze mixture over the top of the chicken breasts. Do not contaminate the glaze by touching chicken.
- Place tray in oven and roast for 20 minutes. Then stir in the green beans and remaining glaze with the potatoes. Mix together. Move rack to the top shelf. Return tray to oven and broil for 5-10 minutes, or until everything is caramelized and slightly charred. The potatoes should be tender and the chicken 165 degrees.

I think my favorite part is that everyone eats it! Everyone! In fact because it is such a well loved meal, I prepare it often for lunches or meal prep. Totally healthy and finished in 30 minutes. Then you can store it and eat it for meals to come.
