We all love bunt cake at our house and this poppy seed bunt is our favorite! The best part of baking with bundt pans is that you get a sophisticated cake with minimal effort. Most recipes take 5-10 minutes to mix up and then bake for 45. Yet everyone who sees the bunt oh’s and ah’s because of the the interesting pan designs. They have no idea how simple it really is. The trick is in the bundt.

- 1 package Yellow cake mix
- 1 3.75 ounce package of instant vanilla pudding mix
- 4 eggs
- 1 cup thick sour cream
- 1/2 cup water
- 1 teaspoon run flavoring
- 1/2 cup butter melted
- 1/4 cup poppy seeds
- Powdered sugar for dusting

Instructions

In a large bowl or using an electric mixer, combine cake and pudding mixes, eggs, sour cream, water, rum flavoring, butter and poppy seeds. Blend on a low speed, then beat at a medium speed for 5 minutes.

Pour batter into a well-greased and lightly floured Bundt pan.

Bake at 350 degrees for about 45 minutes, or until cake tests done. Remove from oven and cool in pan for 15 minutes. Turn onto cake rack and cool completely.

Sift a light dusting of powdered sugar over cake or prepare a glaze.

What is a bundt?
A Bundt cake is any type of cake cooked in a Bundt pan. Since their middles are hollow, more of the batter will touch the sides and result in a desirably crusty edge that not only tastes delicious, but can easily support the weight and consistency of frosting. This makes it a perfect base for complicated, decoration-heavy recipes.
Because of a Bundt pan’s unique shape, recipes must be extremely moist, as plenty of the cake’s surface will be exposed to higher temperatures than normal. Bundt pans also require every nook and cranny to be well-greased and floured to make the transferring process easier and to prevent uneven cooking distributions.
They may take a little getting used to but once you start, you will be hooked! The best part is you can finish them simply by a light dust of powdered sugar. Some of my bundts I don’t even frost. Others I use a basic glaze. Whatever you choose, you will be complimented for your efforts.
