As a busy mom, quick and easy meal ideas are my forte. With a simple assembly line up of the breading you can prepare the chicken in a flash. I love preparing the rest of the meal while the chicken bakes.
Ritzy Chicken
Ingredients
- 8 Boneless skinless chicken breasts thawed
- 2 cups Ritz Crackers
- 1/4 cup Parmesan Cheese grated
- 2 teaspoons garlic salt
- 1 teaspoon seasoned salt
- 1 cup plain yogurt
- 1/4 cup melted butter
Ritzy Chicken
- 1 cup Cream of Chicken
- 1 cup milk
Creamy Sauce
Instructions
- Combine crushed crackers, Parmesan, garlic salt and seasoned salt in a shallow dish.
- Pat chicken dry and then coat with yogurt.
- Dip each piece of chicken in crumb mixture and arrange in 9"x13" baking dish.
- Drizzle melted butter over the top, if desired. Bake at 350 degrees for 45 minutes.
- Serve with wild rice and top with creamy sauce.

Our absolute favorite is to eat Ritzy Chicken over wild rice topped with a creamy chicken sauce. Add your favorite veggie and you are good to go! There are never left overs with this meal but sometimes that’s the best kind of meal!

- 4 cups All-Bran cereal
- 2 cups boiling water
- 1 cup margarine
- 2 1/2 cups sugar
- 4 eggs
- 1 quart buttermilk
- 5 teaspoons baking soda
- 1 teaspoon salt
- 5 cups flour
- 2 cups Bran Flakes Cereal

- Pour boiling water over All-Bran cereal and let sit.
- Cream margarine and sugar, add eggs then dry ingredients alternating with buttermilk.
- Mix in All-Bran and water mixture. Last of all, stir in the Bran Flakes.
- Bake at 400 degrees for 20 minutes in greased or paper-lined muffin tins
*This batter stores in the fridge for 30 days and makes dozens of muffins!
