Pop popcorn and place on a parchment lined cookie sheet. (I like to do it in layers, one bag at a time, so that more of the popcorn gets covered in chocolate and sprinkles.
Melt chocolate in microwave. Start for 30 seconds and then stir. Repeat if needed to remove all lumps.
Using a spatula, drizzle melted chocolate over the popcorn and top with sprinkles.
Add another layer of popcorn to your cookie sheet and repeat.
Let cool for 10 minutes or until the chocolate has hardened. Break up into small pieces and serve in an airtight container for up to one week.
