Sarah Salad is bursting with bacon, peas and Swiss cheese.
If you are like me you tend to make the same five salads anytime you’re assigned a salad for dinner. Nothing wrong with using your favorites, but this is a salad that will stand out! Sarah Salad is bursting with bacon, peas and Swiss cheese and sure to be an instant favorite.
Ingredients
- 1 head iceberg lettuce
- 8 strips bacon
- 1/2 pkg (10 oz) frozen peas
- 1//2 t sugar
- 1/4 t salt
- 1/4 t white pepper
- 1/2 c Swiss cheese
- 1/4 c mayonnaise
- 1/4 c salad dressing (like Miracle Whip)
Instructions
- Wash and drain lettuce; dry thoroughly.
- Dice bacon and saute until crisp; drain on paper towels.
- Run hot water over frozen peas and drain.
- Into salad bowl, tear lettuce into bite-sized pieces.
- Sprinkle with sugar, salt and pepper.
- Add peas, Swiss cheese, mayonnaise and salad dressing.
- Chill.
- Toss when ready to serve and garnish with bacon.
Similar to a BLT, Sarah salad is bread-less, well minus the tomatoes, but seriously has such a fun combination of flavors. The bacon adds a crunchy, savory flavor, the peas provide a sweetness and the swiss cheese creates a balance of sweet/sour. This dressing is one that you typically wouldn’t use, sweet mayonnaise, but provides the perfect glaze for this salad.
Growing up, this was a salad that my mom regularly made. We always thought of our cousin Sarah every time we ate this salad. I don’t think we had many recipes that contained an actual person’s name in it. I think we all secretly hoped one day there would be a meal named after us.
