Simple Family Thai Dinner: Easy coconut curry chicken, Thai mango sticky rice and sweet Samoa truffles.
When I was in college I truely discovered Thai food. My roommates and I would go to Sawadee for every occasion. We learned to try new foods, but always had to order our favorites. We even had my bachelorette party there. Shortly after I was married I discovered I have a food allergy to peanuts and soy, which basically eliminates most Thai food. So anytime I can find a soy-free recipe I’m all over it!
I love international foods and curry is one of my favorites. This coconut curry chicken can be made in just thirty minutes. For a meal that is so delicious you will wonder why you ever ate out.
Thai mango sticky rice is arguably the most popular dessert in Thailand. With it’s rich flavor and melt in your mouth texture, this will be a recipe that you make on repeat.
Although a little time consuming, the result is absolutely worth the wait! I do love that you can work on other things in the kitchen or home while you wait for this recipe to come together. I am always worried it won’t come together and soak in all of the liquids, but with enough heat and patience, it always works.
I love how simple these sweet Samoa truffles are to make and the fact that they taste identical to my favorite Girl Scout cookie. We finally had to put them on a plate and share them with the neighbors because they were disappearing at a ridiculously fast rate. It is the perfect blend of sweetness and texture that will leave you craving more.
