Is there not a better side to chili than corn bread? This corn bread will surely impress. I love that it is simple to make but that everyone will eat it.
The recipe is easy to follow and will be one that you add to your collection. So when you’ve made a winter soup and need something to go with it, this sweet corn bread will be your new favorite.
Sweet Corn Bread
Ingredients
- 4 eggs, yolks and whites separated
- 1 c milk
- 1 t vanilla
- 3/4 c butter, melted
- 1 c cornmeal
- 2 c flour
- 1 1/2 c sugar
- 1 T baking powder
- 1 t salt
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- In a medium bowl, combine egg yolks, milk, vanilla, and melted butter and stir.
- Add the cornmeal, flour, sugar, baking powder, and salt. Stir until fully combined, but do not over mix.
- In a separate bowl, beat the egg whites until stiff peaks form. Carefully fold them into the batter.
- Pour the batter into a greased 9x13 pan and bake for 25-30 minutes or until a toothpick comes out clean.
