The Ultimate Pumpkin Chocolate Chip Cookie: bursting with rich flavors, this pumpkin chocolate chip cookie will be the only cookie you make this fall!
Pumpkin chocolate chip cookies are the ultimate fall treat.
In the fall I make two types of cookies. Gingersnaps or pumpkin cookies. I’ve talked a lot about my soft gingersnaps or my white chocolate dipped soft ginger cookie, they really are incredible. Yet one cannot go through the fall without making a pumpkin chocolate chip cookie.
Ingredients
- 3 c canned pumpkin
- 2 eggs
- 2 t vanilla
- 1 c vegetable oil
- 2 t nutmeg
- 2 t cinnamon
- 2 t baking soda
- 2 t baking powder
- 3 c sugar
- 1 t salt
- 5 c flour
- 1 1/2 c chocolate chips
Instructions
- In a large mixing bowl, combine pumpkin, eggs, vanilla, vegetable oil, nutmeg, cinnamon, baking soda, baking powder, sugar and salt and mix well.
- Add flour and mix to combine.
- Stir in chocolate chips.
- Drop dough onto ungreased cookie sheets and bake at 350 degrees for 15 minutes.
This really is the ultimate pumpkin chocolate chip cookie. I love this recipe because it is so simple to make. You can literally whip up a batch in five minutes. Plus it makes a lot of cookies, like 5-6 dozen, depending on the size. So I love to make a couple of sheets and save the dough in the fridge for another day.
I use my 1.5 inch cookie scoop and can get a dozen on a sheet. They cook quickly and are the perfect treat to get your home smelling like fall. They are my go to for fall parties or gatherings because they are delicious but simple.
How to share the pumpkin love?
My kids love bagging them up and delivering them to our “grandmas and grandpas” that live next door. It is something fun that they not only love to bake but they almost love their visits even more. You can never eat all of the cookies this batch makes so it is the best to share them with those you love!
