White Spinach Jalapeno Queso: melty white cheese, jalapenos, spinach and diced tomatoes all together in this tasty dip.
I’m always looking for quick appetizers to throw together for a crowd. This white spinach jalapeno queso was the hit of our Super Bowl party. It is bursting with flavors that give a little kick with each bite. It is a recipe that you will make once and have requested often.
Ingredients
- 1 T olive oil
- 1/2 c white onion, diced
- 1 jalapeno, seeded and diced
- 12 oz. Mozzarella Cheese, cubed or shredded
- 4 oz. Pepper Jack cheese, shredded
- 2/3 c half and half
- 1 (15 oz) can diced tomatoes with green chilies
- 2 c fresh spinach, chopped
- 1/2 c fresh cilantro, chopped
Instructions
- In a large skillet, heat the oil over medium heat.
- Add the onion and jalapeno and sauté until tender.
- Add the cheese and half and half, continue stirring until melted.
- Add the canned tomatoes, spinach and cilantro and stir well.
- Transfer to a serving dish and serve with tortilla chips.

Simple to mix together in a skillet or sauce pan. You literally gradually add ingredients and stir until all the cheese is melted. It is a dip that everyone will love! We serve ours with tortilla chips but any type of cracker or chip would work.
Growing up the only dip we ever had was 7 layer dip. When I went away to college my roommates introduced me to queso and my life changed forever. This queso isn’t packed with artificial flavors, it’s the fresh stuff, the healthier stuff. It will your life!
